Gofry - Polish waffles with whipped cream and seasonal fruit
My mum's recipe for waffles, the Polish way
If you travel to Poland in the summer, you’ll definitely spot at least one kiosk selling gofry. They’re especially famous at the seaside. As a child, going to Sopot for gofry with whipped cream and fruit while walking along the pier felt like a holiday ritual.
I think they became especially popular in Poland in the 1970s and 80s, when seaside tourism along the Baltic coast was booming. Unlike in Belgium, where waffles are eaten as street food year-round, in Poland they became tied to summer holidays — which is why so many people started making their own gofry at home.
My mum has a beloved recipe that never fails, as long as you follow it properly, and that’s what I’m going to share with you today. We need a waffle maker for this one!
Ingredients for about 12 gofry:
300 g all purpose flour
375 ml milk
80 g vegetable oil
3 eggs
1 tsp baking powder
1 tsp vanilla sugar
pinch of salt
