Raspberry kefir cake
Here comes my raspberry kefir cake! I was bored of standard raspberry cakes and wanted something that literally pours the sauce on itself. That’s how I came up with the idea of a purée topped by a jellyfied layer.
The first layer of the topping is a tangy raspberry purée. Once cooled and set, I added another layer of jellyfied raspberry purée. The cake itself was sweet with caramelized, crispy edges, perfectly balanced by the tart raspberry topping. Using kefir to bake this cake opened up a whole new world of possibilities.
